Restaurant Revamp

After 28 years, popular margarita-and-Mexican joint Cantina Aspen will be undergoing some major changes. Although the owners are awaiting a building permit to wall off the main dining area, it's hoped that the renovation will be completed before the summer season hits. Along with a new look, the concept will change from Tex-Mex to modern Mexican with improved service, ingredients, and menu execution with a "smaller, more quaint" feel, says managing owner Aidan Wynn. Expect signature mezcal and tequila cocktails, and tasty treats like duck carnitas, and birria (goat stew). [The Aspen Times]
