This past weekend in North America's biggest commuter ski town, five Denver chefs used five pigs in a culinary battle of delicious food at the Ritz-Carlton Denver for Cochon 555. There was plenty of pork to be had, copious amounts of delicious booze (OMG, the whiskey!), and tons of fun at this homage to all things pig. In the end, Cochon 555 crowned a new King of Pork, chef Matt Vawter of Mercantile Dining and Provision. Other participating chefs included Kelly Whitaker of Basta and Cart Driver, Rich Byers of the Corner Office, Chris Thompson of the Nickel, and John Little of Harman's Eat + Drink. After claiming his Denver title, Mr. Vawter will now compete against nine other winning Cochon chefs in the Grand Cochon event on Sunday, June 21 at the Aspen FOOD & WINE Classic.
